Tuscan White Bean Salad

Serves: 4-6



  • 1 15 ounce can of white beans or cook from dry beans
  • ½ cup of fresh or fresh lemon juice
  • 1 tablespoon of Dr. Bo’s Golden taste extra virgin olive oil
  • 1 tablespoon of Bragg’s apple cider vinegar
  • ½ cup of red onion chopped in ¼ inch pieces
  • 1 garlic clove chopped
  • 1 bunch Italian parsley leaves only chopped fine
  • Celtic sea salt or Himalayan salt to taste


Place all the ingredients in a glass or ceramic bowl & mix well.  Let the flavors marinate for at least ½ hour & serve as a main dish or side salad.


Combines well with all food groups except fruit
